Cucumber Raita
2 1/2 cups plain low-fat yogurt
    2 cups grated cucumber (unpeeled)
    1 tablespoon grated carrot
  1/2 teaspoon garlic powder
    4 sprigs fresh mint, leaves only, minced finely
  1/4 teaspoon salt
    4 tablespoons raisins
Whisk the yogurt until smooth. Add the rest of the ingredients. Stir, chill, and serve.
Yield: 4 cups
